today i wanted to share with you a fun little vegan recipe i found.
not vegan? no problem. [i bet you already have all the ingredients at home ;)]
cookie dough bites!
original recipe found here. modifications made by me.
how long?
hands-on : 20 minutes // time in fridge : 1 hour
how much?
about 2 dozen
what you need :
*1 cup veg butter [i use earth balance] OR you can use 3/4 cup butter + 1/4 cup applesauce
*1 1/2 cup packed light brown sugar
*1 teaspoon vanilla extract
*2 cups whole wheat flour
*6 ounces chocolate chips [i used dark chocolate AND mint dark chocolate chips]
how to do it :
1) cream together butter and sugar
2) add remaining ingredients and mix well [i used my hands!]
3) roll into small balls [about 1 inch]
4) refrigerate until firm, about 30 minutes. you can dip in melted chocolate OR leave them as is.
5) store covered in the fridge
*these would also be great with crushed nuts, dried fruit, ect.
