Guest Post: Southwestern Stuffed Acorn Squash with Ashley


Hi everyone! It's Ashley from After Nine To Five and today I wanted to share one of my all time favorite Fall recipes with you : Southwestern Stuffed Acorn Squash. It's incredibly easy to make, delicious, and super filling. Ingredients:


  • 2 Acorn Squash
  • 1/2 package of Quorn Crumbles (or hamburger meat)
  • 1/2 chopped large onion
  • 1 Tbsp Minced Garlic
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 1 cup salsa
  • 1/2 can of black beans
  • 1 cup Queso Fresco cheese
Directions: Preheat the oven to 375 degrees. Coat a baking sheet with cooking spray. Cut squash in half and scoop out the seeds. Place with the open side down on baking sheet and bake until tender – approximately 30-45 minutes. Cook the rest of the ingredients other than the cheese (crumbles/meat, onion, garlic, beans, salsa and spices) in a skillet over medium heat until crumbles/meat are cooked through – approximately 20 minutes. Stir occasionally. Once the squash is done, fill the halves with the mixture and top with cheese. Cook until cheese is completely melted – approximately 5 minutes.
